One of my absolute favourite recipes to make is gingerbread biscuits. It reminds me of being a kid again, making biscuits with my Grandma on a Sunday ready for Sunday tea! Here's my recipe, I think it's totally delicious! They can be quite soft if you put them straight into an airtight container, but if you leave them out over night they have that crunch you get with certain bakerys!! Gingerbread 300g self raising flour pinch of salt 1 tbsp ground ginger 100g caster sugar 50g butter or margarine 3 tbsp golden syrup a few drops of milk 1. Heat oven to 160 degrees C. Grease a baking tray. 2. Sift flour, salt and ginger into a bowl and set aside. 3. Heat together the sugar, golden syrup and butter until all the ingredients are melted together. 4. Pour the sugar mixture into the dry ingredients and mix well. 5. Add milk a bit at a time until the mix starts to form a dough. 6. Knead lightly. 7. Wrap in cling film and put in the fridge for approximately 20 minutes. 8. Take the dough out of the fridge and stand for 5 minutes. 9. Flour your surface, roll out and cut into shapes using your favourite cutter. 10. Bake in the oven for 10 - 15 minutes. 11. Allow to cool before transfering to a cooling rack. 12.
